‣‣ OPEN ME ‣‣

1 large head cauliflower, sliced lengthwise through the core  1/4 cup olive oil
2 cloves garlic, minced 
1 pinch red pepper flakes
salt and ground black pepper to taste  2 TBS lemon juice     

Preheat oven to 450 F Line a baking sheet with parchment paper.

Place cauliflower steaks on the prepared baking sheet. Whisk olive oil, lemon juice, garlic, red pepper flakes, salt, and black pepper together in a bowl. Brush cauliflower steaks on both sides with oil mixture. Place in the oven for 15-20 minutes. Continue roasting until tender and golden, 15 to 20 minutes more. 

Vegan pesto:
2 cups fresh basil, tightly packed
1/2 cup toasted pine nuts
2 cloves garlic
1/2 cup white beans
1 -2 TBS lemon juice
1/4 cup nooch
Salt and pepper to taste 

Place everything in a food processor and blend until smooth. Add water or almond milk to adjust consistency. 

Serve cauliflower steaks over sautéed kale or mashed potatoes, drizzle with pesto and enjoy!
