Cheese curds:
1 cup soaked cashews
6-7 cloves of roasted garlic
3/4 cup almond milk
1 TBS nooch
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp salt 
1/4 tsp white pepper
1 TBS lemon juice
1/4 cup tapioca starch 

Blend everything together until smooth, then transfer to a small sauce pan. Place over medium heat, whisking the entire time the cheese is heating up. Once it’s starts to thicken whisk as fast as you can to avoid lumpy cheese. it’s finished cooking once the bottom of the pan starts to dry out and the cheese is too thick to stir.

Line the inside of a small ramekin with plastic wrap and pour cheese inside. Cool in the fridge for 3-4 hours or overnight. 

1/2 onion, diced
1 1/12 cups mushrooms
2 cloves garlic 
1 TBS balsamic vinegar
2 tsp soy sauce (sub tamari for GF) 
1 tsp vegan Worcestershire 
1 tsp tomato paste 
3 TBS corn starch 
1/2 cup veg broth
1 cup vegan soy creamer (or almond milk)

Saute onion, mushrooms and garlic. Add balsamic vin, aminos and worch. Increase the heat and continue to cook until mushrooms are browned, then add the cornstarch and stir. Lower heat to low and add the broth and almond milk while whisking. Cook until you’ve reached your desired consistency. Add more liquid if necessary. Transfer to a blender and blend until smooth. You don’t have to do this step, but I like my gravy to be smooth and not chunky. 


Cut and soak fries for 30 mins, then pat dry on paper towels. Season with avocado or canola oil, salt and pepper. Spread on a parchment paper lined baking sheet and bake at 450 F for 25-30 mins flipping halfway through. You know they’re done with they are golden brown and crispy. 
1. Don’t use olive oil when baking your fries. Olive oil isn’t a high heat oil. Use something like avocado, canola or vegetable oil. 
2. To save time, make the cheese curds and gravy the day before. This allows everything to move along faster on the day you’re making the poutine.
